Description

- 1 lb baby potatoes (Yukon Gold or red)
- 2 tbsp melted butter
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- Fresh parsley or chives for garnish
Instructions
- Boil potatoes until fork-tender, about 15-20 minutes.
- Preheat oven to 400°F (200°C) and arrange potatoes on a greased baking sheet.
- Smash potatoes to about ½ inch thickness.
- Coat with garlic butter, then sprinkle with a dash of salt and pepper
- Bake for 20 minutes or until crispy.
- Sprinkle cheese over each potato, bake 5-7 minutes until melted.
- Garnish with parsley or chives before serving.
Notes
Use a mix of cheddar and mozzarella for the best flavor. Try adding smoked paprika or bacon for an extra taste.
