Description

Deliciously crispy smashed potatoes topped with gooey, melted cheese, seasoned with garlic butter and herbs, making for the perfect side dish or appetizer.


Ingredients

Scale
  • 1 lb baby potatoes (Yukon Gold or red)
  • 2 tbsp melted butter
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • Fresh parsley or chives for garnish

Instructions

  • Boil potatoes until fork-tender, about 15-20 minutes.
  • Preheat oven to 400°F (200°C) and arrange potatoes on a greased baking sheet.
  • Smash potatoes to about ½ inch thickness.
  • Coat with garlic butter, then sprinkle with a dash of salt and pepper
  • Bake for 20 minutes or until crispy.
  • Sprinkle cheese over each potato, bake 5-7 minutes until melted.
  • Garnish with parsley or chives before serving.

Notes

Use a mix of cheddar and mozzarella for the best flavor. Try adding smoked paprika or bacon for an extra taste.
